WINEMAKINGThe end of the fruit shoots are removed during vegetative growth. After one week, the clear must is drawn off after the solid matter is settled. This wine is lightly pressured and has undergone malolactic fermentation, the bacterial conversion of the crisper, apple-type malic acid to the softer, milk-type lactic acid in wine.

TASTINGThe Pinot Noir du Valais is a pleasant and smooth wine. It is fresh and soft on the palate with a smooth finish. The finesse enhances the true character of the Pinot Noir.
GASTRONOMYThis Pinot Noir goes well with red meat, spiced foods and soft cheese.
